My Food Diary, Just Saying

I think I’m craving starches today! LOL Macaroni, sweet potato, and irish potato all in one meal.  Maybe its the cold weather. 

I breaded the frozen chicken breast wit a cereal crumb mixture that I make at home. Placed frozen chicken breast, sliced sweet potato, sliced irsh potato, one whole tomato, and sliced onion on a drip pan. Placed all in Nuwave (or Rapid Air) oven. Bake at 350 15 minutes turn all over and continue to bake 10 more minutes.

Placed one cup macaroni with two cups water in rice cooker. I cooked the macaroni for about 20 minutes in the rice cooker.

Simple, easy, and healthy cooking for a cold day. My daughter made the Chocolate Chip Cake. I certainly enjoyed the two pieces she sent to me—though I didn’t eat both at the same time.  LOL I love that cake she makes! 

I keep this food diary for my own record but if I encourage other people to at least try to cook and eat something, especially when they don’t feel well or feel like standing over a stove stirring something—then I’m glad I helped. *My food choices or method of cooking may not be suitable for everyone. I’ve been busy with things and just simply had to have a little “different” coffee this morning. It was nice for a change. I added a bit of powdered milk and powdered chocolate mix to the coffee and stirred it.  I found serving this special (to me) coffee in a cup and saucer made it even more enjoyable! LOL

Yesterday, I simply did a baked potato in the microwave, sliced up a tomato, opened a can of fruit cocktail (drained it), added 1/2 banana and some salad dressing. I put a small amount of butter on the potato and added chopped green onions. Light meal but quick, easy, and actually was filling.

*I make no claims that the way I eat is what another person should eat. I eat healthier than before I started this blog and it works for me.  Also, the appliances I use to cook, work better for me.  Everything I do can be done in another way.

Baked fish fillet, seasoned potato cubes, cut asparagus pieces, sliced tomatoes, chicken hot dog, with yellow and green onions. (You add seasonings of your choice.) I did the hot dogs since I had some frozen ones that needed to come out of freezer and while I was baking something else I just wanted to “test” baking them.  LOL

I placed FROZEN fish fillet and FROZEN chicken hot dogs in drip pan (place drip pan over 9 in. cake pan with small amount of water to catch drippings) that came with NuWave Oven.

Add the potato cubes and chicken hot dogs. Add seasonings and onions. Bake10 minutes in Nuwave Oven (or Rapid Air Oven), turn all items over. Continue to bake for 10 minutes more. 

I sliced the tomato and placed on plate. I opened canned asparagus pieces, placed directly on plate (I did not heat this), added meat and potatoes—presto—ready to eat!

Delicious, easy, quick (from frozen, mind you), and healthy.

*Kept for personal reason but if I help someone else along the way, I’m glad. I make no claims that my way is for anyone else.  I only know I’m eating healthier.

Veggie Salad and Crackers

I wasn’t very hungry today but knew I needed something nutritious. I recently got fresh veggies and I know they don’t last forever—so I needed to use some of those first.

I simply chopped up lettuce, bell pepper, yellow onion, green onion, celery, and tomatoes. I layered it as I went, knowing I could eat that way or stir it up after it was done. I did add a small amount of low-fat dressing (especially considering the large size salad) and ate with a few whole wheat crackers.

Delicious, filling, fast, easy, and healthy!

Ground Turkey,Rice, Veggie—Stuffed Bell Peppers, Carrot and Tiny Bit of cabbage Slaw, and Sliced Tomatoes.

I like to avoid as much fat as I can. I use drip pan with Nuwave oven to allow meat to cook but not have the fat, etc.

Ground Turkey, (I made two patties)
Black ground pepper or seasoning of your choice)
Place patties on drip pan, bake about 10 minutes, flip patties, bake for about 10 minutes more. Test for doneness. This was fresh ground turkey, not frozen as I frequently do.

While cooking Ground Turkey, cook rice in rice cooker
1 cup rice
2 cups water
2 stalks celery, chopped
1/4-1/2 onion, chopped (amount depends on your taste)
Small amount black ground pepper
Cook all of this in rice cooker together. I just put rice in, water, and put the chopped veggies on top of that and turned the cooker on. LOL

When rice is done and ground turkey patties are done, crumble patties into the rice mixture and stir.

2 bellpeppers, washed and cored
Stuff bellpeppers with cooked rice, veggie, and meat mixture. Bake on drip pan of Nuwave for about 15 minutes. When done, add to plate with sliced tomatoes, and carrot slaw. I added a small amount of prepared, low fat dressing to my serving of carrot salad.

2 large carrots
1/4 head cabbage (if desired)
Process with food processor.

I enjoyed this very much. It was actually fast, easy, and healthy. Thanks for your interest in my blog about “My Food Diary”—kept for medical reasons—my choice. :)

Grilled Turkey Patties, Mandarins, and Leftover Casserole

1 pkg ground turkey meat (make 4 patties) I got the 19.2 oz. pkg of lean, all natural, manually processed, no artificial ingredients

Sprinkle patties with:

pepper

oregano

Italian seasoning

Bake in drain pan that comes with Nuwave oven for about 8 minutes (or on pan in conventional oven just so the pan has holes and something under it to catch drippings)

Flip turkey burgers,sprinkle more black pepper, oregano, and Italian seasonings

Add slice of tomato on top of each burger

Bake for about 5-6 minutes

I heated the turnip, apple, green bean, and macaroni dish I had yesterday on plate I was going to eat on tonight (heated in microwave for 2 minutes)

Add burger with tomato and half of the small can of mandarins (drained) to the plate of heated leftovers and enjoy.

It’s not easy to find low potassium low cholesterol things to eat. What is good for one is not good for the other.  LOL  I did enjoy this meal though. Turkey is not considered red meat and is low in potassium and low cholesterol.  (Thank God) I ate one patty tonight and will use the other three for three more meals! (Probably a Taco Soup or veggie soup of some kind, in slow cooker with one of them).

Thanks for viewing my dilemma with this cooking experience.  I only hope I can help anyone else that might be dealing with the issue of having too much potassium and high cholesterol—and myself, too.

I use Nuwave oven, rice cooker, slow cooker, and microwave a lot.  Anything I do in Nuwave can be done in conventional oven but you will need to adjust time.

Variation of Pizza in Nuwave Oven
I bought a cheaper brand, pre-made pizza.
Placed face down on aluminum foil in the round silicon pan.
Bake for about 15 minutes on 4 inch rack.
Turn Pizza over (I turned onto a plate and slid back into the silicon pan.
I added sliced tomatoes, mushrooms, and grated cheese—on top of the pre-made topping on the pizza.
Bake for about 10 additional minutes.
I use the chart that came with the Nuwave to cook this, I just add some ingredients during the last half of the cooking time and keep an eye on it as it browns and the cheese melts.
This could be done in a conventional oven or toaster oven.  I simply like using the Nuwave.
Delicious! Fast!
