My Food Diary July1, 2012
I just couldn’t stand it any longer! LOL I was hungry for watermelon and decided to cut it today. Oh, well—I’ll have plenty for July 4th. LOL
 I cut about half the watermelon, removed rind and seed, cut into chunks, and bagged. Doing it that way takes less room in the refrigerator and makes it easier to “nibble”. LOL  I filled 2 quart bags with watermelon chunks in addition to the serving I included photo of.
I usually don’t add salt to things but I did sprinkle with salt and pepper (LOL—I like pepper) today. Probably won’t add salt as I nibble though. I didn’t add but a tiny bit to it.
After I eat the two quart bags I prepared, I’ll cut the other half of the watermelon. Watermelon is good to eat on a hot day to help cool off. At least I’ve found that is one of the best things that really helps me. Watermelon is a healthy thing to eat but we need to be aware that it is considered to be a “sweet”.  Be aware of that, especially if you are diabetic or if you help prepare meals for someone that is.

June 11, 2012  My Food Diary

I baked everything in the NuWave Oven for 20 minutes. (Turn all after 10 minutes and then continue baking.) I only added ground black pepper and fresh lemon juice.

I added sliced tomato and sliced strawberries. Easy, fast, nutritious. I’m craving fish a lot lately.

*This can be baked in conventional oven. I simply prefer Nuwave since I start with frozen fish. My diet may not be best for anyone else but I eat healthier than I did.

My Food Diary June 7, 2012

I used torn lettuce leaves, chopped tomato, bellpepper, onion, radish, cucumber, and low fat Ranch dressing.

I also added photo of my “snack” last night.  LOL Frozen Chocolate Yogurt and chopped Fresh Strawberries.

Leftovers day!  I try to cook in small amounts to avoid too many leftovers.  However, usually I cook at least two turkey patties, salmon patties, fish fillets, etc. I had a bit more rice mixture leftover than I thought I would this time. 

I heated the rice mixture in a skillet on stovetop, heated salmon patty in microwave.  I added a little bit of Worcestershire Sauce to the salmon patty.  It tasted good on there.  Added the leftover applesauce to the side.  Topped with sliced strawberry.  Added one whole strawberry to the plate. 

That took care of the leftovers except for tomorrow I’ll have the remaining fish fillet, cabbage/carrot/onion salad, and sweet potato fries.  Then, I have to start over.  LOL

I did some housework yesterday and as typical, I overdid it.  So, really I enjoyed not even having to think about planning something to cook.  Leftovers were really handy.  I love getting things done when I can.  It just feels so good to get things accomplished!  However, I usually pay for it the next day or two and have to rest a lot.  Fibromyalgia does me that way, plus a few other little things I have to deal with.

I cooked grits in microwave according to directions on package. After cooked, I added cheese and some butter. I also added black ground pepper.
I cooked one egg in the microwave with some chopped purple onion, chopped green onion, and some chopped up tomato. I also added black ground pepper and Italian Seasoning.  I use the little egg cooker I’ve talked about in previous blogs. I love using that.
I toasted two pieces of toast in the toaster, added butter when done.
Since I did the red, white, and blue theme—I used red strawberry jam and cut up two strawberries to add to the plate.
Delicious!
