Since I’ve cut back on bread intake, I seldom treat myself to waffles.  I had fruit, non-dairy topping, and canned blueberry pie filling on hand. So, yes—I did it.  LOL (and yes, overdid it, too!) One good thing about waffles, you can prepare a few and freeze the extras)

Rather simple to make with packaged mix and canned pie filling. Chop the fruit and place in a bowl or add to top of waffles when ready to serve. Add syrup, if desired. I included photo of both.

Used Nuwave Oven to bake frozen fish with veggies. I baked (fish and veggies are all in one pan) for 10 minutes, turn all over, continue to bake 10 minutes more. Wash lettuce, cucumber, and tomatoes. Tear lettuce, slice or cut cucumber and tomatoes. Toss. Serve.

I keep a food blog for health reasons, my choice. What I prepare is easy, fast, and healthy. Well, at least I am eating healthier. *May not be suitable for everyone.

Easy cooking (used canned chicken), quick cooking, and healthy. Good for a light meal on a hot day! Salad meal, I suppose you could say.  LOL Chicken Salad, marinated salad, sliced tomato, and a croissant.

I’ve been busy with things and just simply had to have a little “different” coffee this morning. It was nice for a change. I added a bit of powdered milk and powdered chocolate mix to the coffee and stirred it.  I found serving this special (to me) coffee in a cup and saucer made it even more enjoyable! LOL

Yesterday, I simply did a baked potato in the microwave, sliced up a tomato, opened a can of fruit cocktail (drained it), added 1/2 banana and some salad dressing. I put a small amount of butter on the potato and added chopped green onions. Light meal but quick, easy, and actually was filling.

*I make no claims that the way I eat is what another person should eat. I eat healthier than before I started this blog and it works for me.  Also, the appliances I use to cook, work better for me.  Everything I do can be done in another way.

The writing will show up when you click it. :) This is the first time I’ve done the blog this way. LOL May 12, 2012 I frequently use certain items when I cook. I might refer to something that was popular but maybe not readily available right now—though I think anything I use still is available. You might be a young bride just starting out or a teenager looking around for a little help. Of course, I’m not listing every single thing I use but these items that are important to me. Over the past six years or so I went through a lot in life. I lost interest in cooking, you know real cooking. I was very concerned about my health. About seven months ago, I found a Rapid Air Oven (older version of what Nuwave Oven is now) and tried cooking with it. I loved it! This past holiday season, my daughter gave me the NuWave Oven set as a gift. She knew I LOVED the Rapid Air and wanted the Nuwave with all of the extras that came with the set. I appreciate her getting me the NuWave Oven set. I absolutely loved these cookers (Rapid Air and NuWave) I do not work for either company, do not represent them, or make a profit from them. I am just saying—the facts. LOL One thing I like about these oven is that I can cook frozen meat and not get lost in the thawing process. You know, you thaw and then something comes up unexpected and by the time you can cook again, etc, etc, etc. I like knowing I have time to cook it and wanting right then—what I am going to cook. My food can be cooked in a conventional oven but you have to defrost first. A microwave might work better for some of you. I just prefer the Nuwave and Rapid Air ovens **I did not add photos of a microwave or Kitchen Aid Mixer. I LOVE both of them for specific things and use them sometimes, too. Now, for medical reasons, my choice, I try to cook something in as healthy way as I can, with the least stress and worry that I can. I am not a fancy, gourmet cook but I know I am eating healthier. I am slack for a wee bit of time posting my blogs, which are supposed to be daily (LOL) but I often have leftovers and do not have to cook since I simply warm over what I had a day or two ago. I sometimes try to add one new thing to the leftovers meal—for a bit of variety. If I do that, I usually post that day. I appreciate your taking the time to visit my blog. You might run across something of interest along the way. Beginner, in a hurry, don’t like long drawn out recipes and things like that—well—that’s the way I do it. LOL I think most of these meals, etc.might appeal to senior citizens, too. Don’t have to mess up the whole house to cook and it’s better than not eating. *I make no claims that my way is the best way or the healthiest way. I’m just keeping up for myself and if I help someone along the way—that’s wonderful. Oh BY THE WAY, I HAD THIS FORMATTED INTO PARAGRAPHS AND FOR SOME REASON IT DOESN’T DO IT WHEN I SAVE IT. IT WORKED PERFECTLY IN PREVIOUS BLOGS. IT REALLY DISGUSTS ME WHEN I SPEND THE TIME I DO AND THEN SOMETHING DOESN’T WORK RIGHT. I DO HAVE HTML ENABLED..

My Food Diary

Baked Chicken, Steamed Broccoli and Zucchini Squash

1 FROZEN chicken breast (I like the NuWave Oven since I can take frozen food and bake it right away)
Ground Black Pepper, Italian Seasoning, and other seasonings if you like
Place chicken breast on drip pan (comes with Nuwave Oven) I insert this drip pan over a 9 in. cake pan with a little water in it to catch the drippings)

Bake in Nuwave Oven for about 10 minutes., Turn chicken over, add more pepper and seasonings, and also add a few veggies in the drip pan with the chicken, if desired. I added sliced zucchini squash, a piece of broccoli, and some chopped green onion.

Bake for 5-10 more minutes or until done. Meantime, see below:

Add broccoli, sliced zucchini, and sliced green onion to a steamer rack inside the rice cooker pot. Place water to just below the veggies in the pot you usually cook the rice in. Turn on the rice cooker and veggies should be done around the time the chicken breast is done.

Extremely easy, I consider it healthy, and easy clean-up. Delicious, too! (But, I’m not picky!) LOL
I did not like the broccoli done in the Nuwave. I’ll have to try another way to do it in Nuwave. But the broccoli in the rice cooker was fantastic!

*I make no health claims. I keep this food diary for personal health reasons. I eat healthier than I did—so—it’s healthy for me. Things I do in NuWave can be done in conventional oven. However, I prefer Nuwave since I can start with frozen meat and cook it without defrosting. It’s moist, done, and easier for ME!

Veggie Salad and Crackers

I wasn’t very hungry today but knew I needed something nutritious. I recently got fresh veggies and I know they don’t last forever—so I needed to use some of those first.

I simply chopped up lettuce, bell pepper, yellow onion, green onion, celery, and tomatoes. I layered it as I went, knowing I could eat that way or stir it up after it was done. I did add a small amount of low-fat dressing (especially considering the large size salad) and ate with a few whole wheat crackers.

Delicious, filling, fast, easy, and healthy!
