4 Fruit Oatmeal with Whole Wheat Toast.

Yes, I managed to get 4 fruits in this bowl of oatmeal. Delicious, too!  Fruits added were: orange, apple, raisins, and peach slices. Delicious. I added no sugar. Cooks in about 1 1/2 minutes in microwave (depending on your microwave).

It was delicious and a way to get more fruit for the day.

*I realize my choices of foods or cooking methods may not be suitable for everyone. I find I’m eating healthier than I did—-the reason for this blog—-so  I KNOW what I did eat and IF it is healthier.

Veggies and Microwave Cornbread Muffins

I post this blog post to share (with anyone) EASY, FAST ways of cooking. Beginners, people with medical issues that makes traditional, from scratch cooking a chore they can’t handle anymore, elderly people that don’t want to stand in the kitchen all day, etc. I don’t expect my photos to be in “Food Beautiful” but do hope I can offer ideas to those seeking a healthier (not healthy when you don’t eat cause you don’t feel like cooking), easier, faster way of cooking. Yep, I show and tell the good, bad, and ugly—as a guide to my experiences. 

I was craving veggies. I had some fresh veggies on hand and decided to give it a try.

Slow cooker:   What i did (use amount of each—as YOU wish) sliced cabbage, pieces of carrot, one medium potato (quartered), 1/2 onion (sliced), some broccoli, and some frozen yellow squash. I cooked this combo 3-4 hours, on low. Since I started this so late I decided to wait to eat it the next day. Placed cooled veggie, cooked, mixture into a container and placed in the refrigerator.

Next day:  I placed the veggie mix into a rice cooker, added water, plugged in and let it heat about 20 minutes. I think I will cook this type veggie mix in the rice cooker to start with, next time. LOL

I also cooked 1 cup rice in a different rice cooker. That way the rice and the veggies were ready at the same time.

While rice and veggies were cooking, I mixed up ingredients for cornbread (according to recipe on corn meal package). I found out a couple of months ago (by trial and error) that I can bake corn bread muffins in 2 minutes in the microwave! I used 4 silicon muffin  cups that can be used in a microwave (they came with the NuWave oven). Filled with cornbread mixture, placed silicon cups on a plate, covered with a plastic, vented cover (cover is made to put over plates and is vented), and set microwave for 1 minute. I tested it after 1 minute, wasn’t done so I cooked 1 more minute (on normal setting) and it was done!

Placed rice in bowl, veggies and juice on top of that, and cut one cornbread muffin into 4 pieces, added to the top. LOL It was delicious and I think quite nutritious. * I realize my choice of food and/or cooking methods are not suitable for everyone.

A drawback: I found 2 drawbacks to the cornbread muffins. Even with the cover over them they were lopsided a little—as if air blew them that way. My microwave has the turntable that moves during the baking process so I don’t know if it was air blowing through the vented top or the revolving turntable that blew them uneven on top. 

The cornbread muffins done in a microwave are NOT for company. Breads done in microwave do not brown, though it’s done. But, for times the browning is not as important as the easy and fast—microwave is the way to go—in my opinion. Also, cornbread done in traditional oven or iron skillet usually cook “level” and not a little lopsided.

My Food Diary, for medical purposes, my choice

Baked fish with veggies, corn and tomatoes, and baked apple slices

It hit me, I was starving for fish! I package the fish I buy in individual plastic bags (usually one piece of fish to a small bag) and then I package several individual bagged fillets into a large freezer bag. I don’t have to use more than the number of bags I need, they don’t stick to each other, and double wrapped—they are protected better while frozen.

Any of this below can be done in conventional oven. I prefer the Nuwave Oven since I can cook frozen fish and not have to have defrost time and then cooking time. I like healthy, easy, fast, and uncomplicated.

Place in drip pan that comes with Nuwave Oven and place a cake pan with some water below this to catch drippings.
1 large frozen fish fillet
Ground black pepper
Italian seasoning
A few onion slices
Bake for 10 or15 minutes.

Turn fish over (leave onion slices on bottom)
Add more black pepper, Italian seasoning, sliced onion, sliced bell pepper, and a couple of slices of tomato.
Placed sliced apple (cut in slices) around in pan and sprinkle with cinnamon.

Bake for 10 minutes or until done.

I opened a can of whole kernel corn and placed serving on plate along with diced tomatoes (I used canned for this) heat in microwave about 1 1/2 minutes. Add fish with veggies on top, and then add baked apples.

Easy (especially going from frozen to complete mean in about 30 minutes. Healthy, fast, not complicated at all, and DELICIOUS!

Breakfast, any time of day! LOL

1/4 cup grits
3/4 cup water
Add to microwave safe container. Cook 1 1/2 minutes, stir, cook 1 minute more. Check in less time each time, stir each time. When done, add amount of cheese you desire. Stir. Serve on plate with egg and toast.

1 egg
1 T. water
Place egg into egg cooker (see photo). Add water. Scramble egg, Add black pepper. Cook in microwave until done. This is usually 1 minute for mine. Add to plate with grits.

2 slices bread
Place bread in toaster. When done, remove, spread lightly with coconut oil (instead of butter), if desired. Cut into desired shape or leave whole. Add to plate with grits and egg. \

Enjoy! I usually don’t use oils, butter, and such when cooking. However, now and then I do put coconut oil on something, for variety.

Easy and quick. I think it’s healthy, too. We should have “some” of all food groups but not in excess.

Baked Chicken, Macaroni, and Mixed Veggies

I have to watch what I eat for medical reasons. Some of the things good for one thing is not good for another and I have to try to balance between the choices so that I try to do best for both things I have to watch out for. I try to cook healthy and have for a long time though I do this blog to keep track of what I DO eat but if I can help someone else by publishing this food diary, that’s great.

4 chicken breast (mine were frozen)
black pepper and Italian seasoning

1. Place the frozen chicken breast on drip pan that comes with Nuwave Oven, I place this on a cake pan, with water added. Drip pan fits this cake pan so that the food is not exposed to the water/drippings.(You can cook this in a conventional oven but would likely need to defrost chicken first)
2. Place these pans on 1 in. rack in Nuwave.
3. Sprinkle with black pepper and Italian Seasoning (or seasonings of your choice)
4. Bake for 15 minutes, turn chicken breasts over after that. Continue to bake for 15 minutes more, or until done.

Place in slow cooker, on high
1 cup dry macaroni
2 cups water
Cook in slow cooker, on high, until done. Mine was done in about 20 minutes.

1 can mixed veggies ( this time I used okra, tomatos, and corn mixture)
Place portion for your plate on microwave safe plate, heat about 1-1 1/2 minutes.

Add to plate with the veggie mixture: Serving of macaroni and baked chicken breast. Enjoy.

Later that evening, I mixed pineapple chunks, sliced peaches, and canned apricots to make a salad (dessert). I love honey mustard salad dressing—so—I added a little of that to the top of the individual salad of fruit. ** last photo is of salad.

I’m trying to use down things in my freezer. I think every package I take out reproduces! LOL You know how that goes. LOL I usually place one or two chicken breast to a small bag and add those filled bags to a large freezer bag. I was in a hurry, I suppose, when I brought these home and did not do this. So, I had to cook all four chicken at once this time. Guess we know what I’ll be having for a couple of days. LOL

*Any of these recipes can be done the conventional way, using stove top and oven. I simply prefer the Nuwave, slow cooker, and microwave to save time, it’s easier for me, and I simply like doing it that way. Please note third-to-last I’ve added 2 more photos since I posted this, of smoothie. Please take that into account) photo of the grease/chicken fat that collected in the water underneath the drip pan.This was skinless chicken breast, too. I was certainly surprised.

Mid-afternoon: 1 strawberry, cantaloupe, and strawberry yogurt smoothie.

I added frozen fruit, strawberry yogurt, and a little apple juice (can use water or milk) to blender container. Blended until smooth. (I had no recipe so I just added fruit, yogurt, and liquid until it seemed correct consistency to drink. LOL It was good.

Chicken in Orange Sauce, Triple Succotash, and Rice

I’ve been on a three day fast so there has been nothing to post. LOL Today I knew what I was wanting to have and believe me it tasted great. I did make a mistake in the photo. I should have put the rice in the center of the plate. I was in somewhat of a hurry so I didn’t. Oh, well, next time.

1 chicken quarter (mine was frozen)
3 oranges, (Squeeze for juice)
1/2 cup water
Black pepper
3 whole cloves
Cinnamon (I just sprinkled in the juice and on the chicken)
Place juice, whole cloves, and water in the small cake pan
Add chicken,
Sprinkle juice and chicken with cinnamon (I just looked and did not measure)

Place in Nuwave Oven (I placed fleshy part down)
Bake for 10-15 minutes
Turn chicken over, add more black pepper, cinnamon, and chopped green onions.
Bake addition 15 minutes, or until done.

Cook 1 cup rice with 2 cups water, in rice cooker (Cook rice while the chicken is baking. It takes around the same time to do rice in the rice cooker as it takes for chicken to bake)

Open can of Triple Succotash and drain, Place serving on plate. Place in microwave for about 1 minute or so to get it hot.


I’m trying to use everything out of the freezer. I declare, every time I get a package out of there, I think it multiplies.Not complaining but you know how that can be. If I wasn’t trying to use everything, it wold probably be bare. Ok, for the easy, simple instructions. I believe in healthy, easy, and simple!

I usually use only chicken breasts but I did find this chicken quarter and decided to use it.

I used Nuwave Oven. The recipe I saw did all of this in a skillet. I just like using the Nuwave and this chicken was frozen when I started baking it. One of the great wonders of using Nuwave! I used smaller cake pan to hold chicken since there was a sauce involved. Usually I just put the chicken in drip pan.

Add chicken and rice to plate with the Triple Succotash and enjoy. Believe me, I did enjoy it. Thank you for looking at my blog.

Cheesy Grits, Scrambled egg, Toast, and Apples

1/4 cup grits
3/4 cup water
1/4 cup shredded cheddar cheese (or amount you desire)
Place grits and water in container, place in microwave, cook for 1 1/2 minutes, stir
Cook 30 seconds, stir (do this in 30 second intervals until done)
Add cheese and stir.

1 egg
1 teaspoon water
seasonings of your choice

Place egg in micro egg cooker, add water, mix with wire whisk
Cook 1 minute in microwave.
Sprinkle with black pepper and Italian seasoning

2 pieces whole wheat bread
small amount of coconut oil

Place bread in pop-up toaster when done, spread small amount of coconut oil on each piece. Slice bread in half, diagonally.

Wash apple, cut into slices or pieces. Add to plate with grits, egg, and toast.

Delicious! Not fancy but easy, quick, and good!

Grilled Chicken Breasts, Spaghetti cooked in sauce, Green Beans, and Radishes

1 small portion dry spaghetti, break in half

Water to cover spaghetti, in slow cooker

Turn on high for about 1 hour

Add chopped celery, green onion, and any other things like bell pepper if you like,

Add 1 can tomato sauce

Add Black pepper and Italian seasoning

Cook about 30 minutes.

2 frozen chicken breast on drip pan, on 1 inch rack, in Nuwave Oven

Add seasonings of choice

Cook 10 minutes per side, flip chicken breast halfway through cooking time and add more seasonings to flipped side.

Heat green beans on plate in microwave.

Slice 1 radish to garnish green beans.

Add 1 chicken breast and serving of spaghetti

Sprinkle spaghetti with  Parmesan & Romano Cheese

Serve and enjoy!

I know some people do not like the idea of cooking spaghetti in the sauce and prefer sauce in different container to spoon over the spaghetti.  I just prefer the less mess and cleanup and the taste is fine with me.  This was meatless sauce since I served a piece of chicken breast for the meat.  I’ll use the other chicken breast for another meal.

I want to eat healthy, don’t want big mess, and don’t want to be in kitchen all day hovering over stuff.  I must say, it was delicious—to me! LOL

I cooked grits in microwave according to directions on package. After cooked, I added cheese and some butter. I also added black ground pepper.

I cooked one egg in the microwave with some chopped purple onion, chopped green onion, and some chopped up tomato. I also added black ground pepper and Italian Seasoning.  I use the little egg cooker I’ve talked about in previous blogs. I love using that.

I toasted two pieces of toast in the toaster, added butter when done.

Since I did the red, white, and blue theme—I used red strawberry jam and cut up two strawberries to add to the plate.

Delicious!
