Chicken Salad Plate, Complete Meal

Place chicken (canned chicken is great since you don’t have to cook it and it’s ready to use. Comes in can like tuna fish does.) in bowl. Chop up the amount of bell pepper, onion, celery, radishes, etc. in a food chopper. Add to chicken. Add spicy mustard and pickle relish, as desired.

Place washed and drained lettuce on plate. Top with several spoons of the chicken salad mixture, add a few pieces of chopped tomato, chopped green onion, ground black pepper, and Italian Seasoning.

Actually, you can use mixture you desire, depending what you like in chicken salad. This is what I had on hand and it’s also what I like in chicken salad. There is no set amount as in cups, spoons, ounces, etc. Just chop, mix, serve, and enjoy. (You may use salad dressing, as I did or eat plain, without anything on top of the salad.)

This chicken salad that I did was served on a regular dinner plate and was my complete meal.  It was easy, healthy, fast, and delicious. Thank you so much for reading my blog, sharing it, trying it, or whatever. Enjoy.

Easy Fish Fillet with Oven Fries

1 frozen fish fillet

Place on small pan sprayed with olive oil.

Smear spicy mustard, store bought, on both sides of the fish

Slice onion and place 1/2 of it on top of fish

Chop 2 green onions and place on top of the fish

1 Irish potato, washed and scrubbed with brush, cut in fries

Place potato slices around fish

Add black pepper and other seasonings of your choice

Place in Nuwave Oven. Bake at 350 degrees for 10 minutes.

Take out of oven and turn fish fillet and fries over.

Add remaining sliced onion and 2 more chopped green onions, on top of fish.

Bake for 10 more minutes.

While fish is cooking, make green salad or salad of your choice.


I am only adding photo of fish and fries so it will show on photo better.  The salad adds color to this meal.  I served spicy mustard and honey mustard dressing, instead of ketchup.

I try to do things that are time saving and easy for people that can’t or don’t want to cook all day but do want to eat healthy, uncomplicated meals. I show one plate to give ideas for single people, people who are elderly, people with health problems, etc. They don’t all like to do the all day cooking thing. LOL
