My Food Diary
Oven Fried, Red Tomatoes and leftovers meal.
I used leftovers for everything in the meal except I did oven-fried red tomatoes. I won’t go over how I did the leftovers when first cooked.
2 medium-large red tomatoes
1 cup plain or self-rising flour (may need more than a cup)
2 eggs, beaten, in a bowl
1 cup ground whole wheat cereal (do in blender or food processor-until consistency you desire)
If you do not want to do the whole wheat cereal, breadcrumbs will work. I just think the cereal adds more nutrition.
Wash and slice tomatoes. Dip in flour, then egg, then in crumbs.Make sure both sides are coated.
I baked a 9 in. cake pan full of red tomato slices.
Bake in Rapid Air or NuWave Oven for about 10 minutes. Turn tomato slices over. Continue to bake about 5 more minutes (or until done).
A bit more involved with the dipping, etc.than I usually do but ever now and then it’s just nice to have the “works”! I just couldn’t stop eating those oven fried tomatoes!
