My Food Diary, Just Saying

Lunch today. Slow cooker spaghetti, baked chicken slices, spinach, and fresh strawberries. Easy, healthy, and fast.

*I realize my choices of food or method of cooking may not be suitable for everyone. I keep this food diary for my own medical reasons, my choice and for encouragement to other people that may not feel like long, drawn out cooking but need to eat. :)

Oh, wow! How quickly things change! Didn’t post to Twitter as it usually does. I wonder why???? :( Everything is always changing and usually not for the best, IN MY OPINION!

January 1, 2013   Happy New Year!
I thought I would cook more foods for this meal. Turns out I just was not hungry enough for all I planned so, I prepared less.
No photo of the salad,  but I prepared an apple, kiwi, and raisin salad and ate that  around Noon. . I just wasn’t hungry until around 3 PM. 
I use appliances and can do the type meals I want in a relatively short time, so I’m quite flexible about making changes on the spur of the moment. I also don’t like having a lot, lot of leftovers. Don’t mind enough leftovers for one or two repeats, but that’s all. Yes, many people like to freeze leftovers and cook in large quantity for that purpose. That’s great if you enjoy doing that.
I steamed the cabbage with bell pepper and onion in the rice cooker for about 15-20 minutes. I bought a can of black eye peas this year instead of soaking peas and cooking. All I had to do was heat the amount of peas for this meal and I have enough left for one more meal this week. I baked the sweet potato in the microwave. The cornbread muffins were prepared a couple of days ago so I only had to heat those today. I do bake my cornbread muffins in a toaster oven.I usually prepare one 6 muffin pan batch, which last me about three meals.
I try to prepare easy, fast, economical meals with a budget in mind. My methods of cooking or choice of food are not suitable for everyone. However, I know some elderly people, folks with health problems, or someone cooking for 1 or 2 just simply won’t eat as well or often if they have to stand over a cookbook and stove all day.
I do this blog to keep up with what I eat, by choice. If I help anyone else or inspire them to cook or eat better—then that’s great. I make no claims that my way is anything but my way and my choice.  I like using appliances that I set the timer and it shuts off if I get busy and forget to look the second I needed to.  LOL I’m sure many of you know what I mean. I do admire the real cooks that enjoy the fancier, more difficult, and time consuming type labor of love that they manage to do.  It’s just not what I do anymore.
After all the Holiday eating of more food than usual and richer foods (lol) I really enjoyed the simple meal today. Thanks for stopping by to read my blog.

Today I baked fish, potato chunks, onion, and bell peppers. The fish was frozen. I placed everything in a pan, placed in Nuwave oven, set time for 10 minutes and started the oven. After the 10 minutes, I turned everything over, added a bit more onion and pepper, set timer for another 10 minutes and pressed start.

I prepared lettuce and tomato salad while the fish cooked the last 10 minutes. Placed all on plate and enjoyed eating my fast, easy, healthy meal. I’m past all of that complicated cooking.  LOL

My Food Diary August 09, 2012

Steak was frozen when I placed it in Rapid Air/Nuwave Oven. (Rapid Air is earlier version of Nuwave, I believe) I added potato pieces to the same container as the steak. Bake 10 minutes, turn everything over, add slices of bell pepper and onion. (see bottom photo)  Bake 10 minutes more.

When done, I added salad to the plate with small amount of salad dressing.

I baked the chicken and some chicken hot dogs (have hot dogs tomorrow), in Nuwave Oven. Chicken breast was frozen when I started baking. I baked 10 minutes, turned over, baked another 10 minutes.

While meat baked, I tore lettuce leaves and prepared washed veggies (you may slice or chunk, your preference). After chicken was baked, I cut into pieces and added to the bowl. Toss and it’s done! Easy, quick, light for this hot weather, and delicious.

Photo of veggies: Yummy veggies I got last week. Enjoyed, enjoyed, enjoyed! LOL Thanks for sharing with me!  Now, (lol) when are the tomatoes ready (or anything else) ?????? Just had to say it—I’m bad, huh? LOL

*I eat healthier than before. Added NO oil or salt. Meat can be prepared in various ways but I just prefer NuWave. My food choices or method of preparation may not be suitable for everyone.

Chicken Salad Plate, Complete Meal

Place chicken (canned chicken is great since you don’t have to cook it and it’s ready to use. Comes in can like tuna fish does.) in bowl. Chop up the amount of bell pepper, onion, celery, radishes, etc. in a food chopper. Add to chicken. Add spicy mustard and pickle relish, as desired.

Place washed and drained lettuce on plate. Top with several spoons of the chicken salad mixture, add a few pieces of chopped tomato, chopped green onion, ground black pepper, and Italian Seasoning.

Actually, you can use mixture you desire, depending what you like in chicken salad. This is what I had on hand and it’s also what I like in chicken salad. There is no set amount as in cups, spoons, ounces, etc. Just chop, mix, serve, and enjoy. (You may use salad dressing, as I did or eat plain, without anything on top of the salad.)

This chicken salad that I did was served on a regular dinner plate and was my complete meal.  It was easy, healthy, fast, and delicious. Thank you so much for reading my blog, sharing it, trying it, or whatever. Enjoy.

Veggie Salad and Crackers

I wasn’t very hungry today but knew I needed something nutritious. I recently got fresh veggies and I know they don’t last forever—so I needed to use some of those first.

I simply chopped up lettuce, bell pepper, yellow onion, green onion, celery, and tomatoes. I layered it as I went, knowing I could eat that way or stir it up after it was done. I did add a small amount of low-fat dressing (especially considering the large size salad) and ate with a few whole wheat crackers.

Delicious, filling, fast, easy, and healthy!

Chicken in Orange Sauce, Triple Succotash, and Rice

I’ve been on a three day fast so there has been nothing to post. LOL Today I knew what I was wanting to have and believe me it tasted great. I did make a mistake in the photo. I should have put the rice in the center of the plate. I was in somewhat of a hurry so I didn’t. Oh, well, next time.

1 chicken quarter (mine was frozen)
3 oranges, (Squeeze for juice)
1/2 cup water
Black pepper
3 whole cloves
Cinnamon (I just sprinkled in the juice and on the chicken)
Place juice, whole cloves, and water in the small cake pan
Add chicken,
Sprinkle juice and chicken with cinnamon (I just looked and did not measure)

Place in Nuwave Oven (I placed fleshy part down)
Bake for 10-15 minutes
Turn chicken over, add more black pepper, cinnamon, and chopped green onions.
Bake addition 15 minutes, or until done.

Cook 1 cup rice with 2 cups water, in rice cooker (Cook rice while the chicken is baking. It takes around the same time to do rice in the rice cooker as it takes for chicken to bake)

Open can of Triple Succotash and drain, Place serving on plate. Place in microwave for about 1 minute or so to get it hot.


I’m trying to use everything out of the freezer. I declare, every time I get a package out of there, I think it multiplies.Not complaining but you know how that can be. If I wasn’t trying to use everything, it wold probably be bare. Ok, for the easy, simple instructions. I believe in healthy, easy, and simple!

I usually use only chicken breasts but I did find this chicken quarter and decided to use it.

I used Nuwave Oven. The recipe I saw did all of this in a skillet. I just like using the Nuwave and this chicken was frozen when I started baking it. One of the great wonders of using Nuwave! I used smaller cake pan to hold chicken since there was a sauce involved. Usually I just put the chicken in drip pan.

Add chicken and rice to plate with the Triple Succotash and enjoy. Believe me, I did enjoy it. Thank you for looking at my blog.

I was really hungry for fish!  Also, I see I was craving “yellow” foods.

Chop:

1/4 cabbage

2 carrots

1/4 onion

Add a small amount of Italian Dressing in with the veggies as you chop

I did it in food processor.

Slice:

1 large Sweet Potato (wash and scrub)

I sliced in rounds, this time.

I soaked the two fish fillets in a small amount of Italian Dressing for an hour or so

Place on drip pan that came with Nuwave Oven.

Add pepper and Italian Seasoning

Bake in NuWave Oven, bottom rack, for ten minutes, turn over

Add additional black pepper and Italian Seasoning, continue baking on 1 in. rack

Place 4 inch rack and place cut sweet potatoes, in a small round baking pan.

Cook fish and sweet potatoes for 10 minutes.

It was delicious!
