My Food Diary June 27, 2012

Used Nuwave Oven to bake frozen fish with veggies. I baked (fish and veggies are all in one pan) for 10 minutes, turn all over, continue to bake 10 minutes more. Wash lettuce, cucumber, and tomatoes. Tear lettuce, slice or cut cucumber and tomatoes. Toss. Serve.

I keep a food blog for health reasons, my choice. What I prepare is easy, fast, and healthy. Well, at least I am eating healthier. *May not be suitable for everyone.

Easy cooking (used canned chicken), quick cooking, and healthy. Good for a light meal on a hot day! Salad meal, I suppose you could say.  LOL Chicken Salad, marinated salad, sliced tomato, and a croissant.

I’ve been busy with things and just simply had to have a little “different” coffee this morning. It was nice for a change. I added a bit of powdered milk and powdered chocolate mix to the coffee and stirred it.  I found serving this special (to me) coffee in a cup and saucer made it even more enjoyable! LOL

Yesterday, I simply did a baked potato in the microwave, sliced up a tomato, opened a can of fruit cocktail (drained it), added 1/2 banana and some salad dressing. I put a small amount of butter on the potato and added chopped green onions. Light meal but quick, easy, and actually was filling.

*I make no claims that the way I eat is what another person should eat. I eat healthier than before I started this blog and it works for me.  Also, the appliances I use to cook, work better for me.  Everything I do can be done in another way.

Chicken Salad Plate, Complete Meal

Place chicken (canned chicken is great since you don’t have to cook it and it’s ready to use. Comes in can like tuna fish does.) in bowl. Chop up the amount of bell pepper, onion, celery, radishes, etc. in a food chopper. Add to chicken. Add spicy mustard and pickle relish, as desired.

Place washed and drained lettuce on plate. Top with several spoons of the chicken salad mixture, add a few pieces of chopped tomato, chopped green onion, ground black pepper, and Italian Seasoning.

Actually, you can use mixture you desire, depending what you like in chicken salad. This is what I had on hand and it’s also what I like in chicken salad. There is no set amount as in cups, spoons, ounces, etc. Just chop, mix, serve, and enjoy. (You may use salad dressing, as I did or eat plain, without anything on top of the salad.)

This chicken salad that I did was served on a regular dinner plate and was my complete meal.  It was easy, healthy, fast, and delicious. Thank you so much for reading my blog, sharing it, trying it, or whatever. Enjoy.

I might refer to something that was popular but maybe not readily available right now—though I think anything I use still is available. You might be a young bride just starting out or a teenager looking around for a little help. Of course, I’m not listing every single thing I use but these items that are important to me. Over the past six years or so I went through a lot in life. I lost interest in cooking, you know real cooking. I was very concerned about my health. About seven months ago, I found a Rapid Air Oven (older version of what Nuwave Oven is now) and tried cooking with it. I loved it! This past holiday season, my daughter gave me the NuWave Oven set as a gift. She knew I LOVED the Rapid Air and wanted the Nuwave with all of the extras that came with the set. I appreciate her getting me the NuWave Oven set. I absolutely loved these cookers (Rapid Air and NuWave) I do not work for either company, do not represent them, or make a profit from them. I am just saying—the facts. LOL One thing I like about these oven is that I can cook frozen meat and not get lost in the thawing process. You know, you thaw and then something comes up unexpected and by the time you can cook again, etc, etc, etc. I like knowing I have time to cook it and wanting right then—what I am going to cook. My food can be cooked in a conventional oven but you have to defrost first. A microwave might work better for some of you. I just prefer the Nuwave and Rapid Air ovens **I did not add photos of a microwave or Kitchen Aid Mixer. I LOVE both of them for specific things and use them sometimes, too. Now, for medical reasons, my choice, I try to cook something in as healthy way as I can, with the least stress and worry that I can. I am not a fancy, gourmet cook but I know I am eating healthier. I am slack for a wee bit of time posting my blogs, which are supposed to be daily (LOL) but I often have leftovers and do not have to cook since I simply warm over what I had a day or two ago. I sometimes try to add one new thing to the leftovers meal—for a bit of variety. If I do that, I usually post that day. I appreciate your taking the time to visit my blog. You might run across something of interest along the way. Beginner, in a hurry, don’t like long drawn out recipes and things like that—well—that’s the way I do it. LOL I think most of these meals, etc.might appeal to senior citizens, too. Don’t have to mess up the whole house to cook and it’s better than not eating. *I make no claims that my way is the best way or the healthiest way. I’m just keeping up for myself and if I help someone along the way—that’s wonderful. Oh BY THE WAY, I HAD THIS FORMATTED INTO PARAGRAPHS AND FOR SOME REASON IT DOESN’T DO IT WHEN I SAVE IT. My Food Diary

Baked Chicken, Steamed Broccoli and Zucchini Squash

1 FROZEN chicken breast (I like the NuWave Oven since I can take frozen food and bake it right away)
Ground Black Pepper, Italian Seasoning, and other seasonings if you like
Place chicken breast on drip pan (comes with Nuwave Oven) I insert this drip pan over a 9 in. cake pan with a little water in it to catch the drippings)

Bake in Nuwave Oven for about 10 minutes., Turn chicken over, add more pepper and seasonings, and also add a few veggies in the drip pan with the chicken, if desired. I added sliced zucchini squash, a piece of broccoli, and some chopped green onion.

Bake for 5-10 more minutes or until done. Meantime, see below:

Add broccoli, sliced zucchini, and sliced green onion to a steamer rack inside the rice cooker pot. Place water to just below the veggies in the pot you usually cook the rice in. Turn on the rice cooker and veggies should be done around the time the chicken breast is done.

Extremely easy, I consider it healthy, and easy clean-up. Delicious, too! (But, I’m not picky!) LOL
I did not like the broccoli done in the Nuwave. I’ll have to try another way to do it in Nuwave. But the broccoli in the rice cooker was fantastic!

*I make no health claims. I keep this food diary for personal health reasons. I eat healthier than I did—so—it’s healthy for me. Things I do in NuWave can be done in conventional oven. However, I prefer Nuwave since I can start with frozen meat and cook it without defrosting. It’s moist, done, and easier for ME!

My Food Diary, for medical reason, my choice
*Disclaimer: I eat healthier than I did before. I do not claim this is the way for another person to eat. However if you find any of the methods I use or the food I choose, you are welcome to use it yourself for share. Usually, when I cook, I show one or two servings.

Veggie Meal

3 large carrots, brushed, washed, and sliced
2 zucchini squash, brushed, washed, and sliced.
1 t. olive oil
1 t. balsamic dressing
Sprinkle of ground, black pepper
Combine all of above in bowl, stir to coat with the oil and dressing
After stirring, put in a 8 or 9” cake pan, on lower rack of NuWave Oven
Bake for 12 minutes (or until done), stirring once after first 6 minutes.

Meanwhile, Cut up cabbage (about 1/4-1/2 head). Place cabbage on a rack inside rice cooker container. Place rack inside the part you usually cook the rice in. Add water to just below the rack. Cook about 15 minutes or until done, as you like.

While veggies and cabbage are cooking:
Cut up lettuce
chop or slice bell pepper
chop or slice yellow onion
Cut or slice tomato
Sprinkle with ground black pepper
Pour small amount of honey mustard dressing over top of salad

Very easy, fast, uncomplicated (considering following long, long recipes), healthy (healthier than I use to do! LOL), and delicious. Enjoy!

My Food Diary, for medical purposes, my choice

Baked fish with veggies, corn and tomatoes, and baked apple slices

It hit me, I was starving for fish! I package the fish I buy in individual plastic bags (usually one piece of fish to a small bag) and then I package several individual bagged fillets into a large freezer bag. I don’t have to use more than the number of bags I need, they don’t stick to each other, and double wrapped—they are protected better while frozen.

Any of this below can be done in conventional oven. I prefer the Nuwave Oven since I can cook frozen fish and not have to have defrost time and then cooking time. I like healthy, easy, fast, and uncomplicated.

Place in drip pan that comes with Nuwave Oven and place a cake pan with some water below this to catch drippings.
1 large frozen fish fillet
Ground black pepper
Italian seasoning
A few onion slices
Bake for 10 or15 minutes.

Turn fish over (leave onion slices on bottom)
Add more black pepper, Italian seasoning, sliced onion, sliced bell pepper, and a couple of slices of tomato.
Placed sliced apple (cut in slices) around in pan and sprinkle with cinnamon.

Bake for 10 minutes or until done.

I opened a can of whole kernel corn and placed serving on plate along with diced tomatoes (I used canned for this) heat in microwave about 1 1/2 minutes. Add fish with veggies on top, and then add baked apples.

Easy (especially going from frozen to complete mean in about 30 minutes. Healthy, fast, not complicated at all, and DELICIOUS!

I cooked grits in microwave according to directions on package. After cooked, I added cheese and some butter. I also added black ground pepper.
I cooked one egg in the microwave with some chopped purple onion, chopped green onion, and some chopped up tomato. I also added black ground pepper and Italian Seasoning.  I use the little egg cooker I’ve talked about in previous blogs. I love using that.
I toasted two pieces of toast in the toaster, added butter when done.
Since I did the red, white, and blue theme—I used red strawberry jam and cut up two strawberries to add to the plate.
Delicious!

I cooked grits in microwave according to directions on package. After cooked, I added cheese and some butter. I also added black ground pepper.

I cooked one egg in the microwave with some chopped purple onion, chopped green onion, and some chopped up tomato. I also added black ground pepper and Italian Seasoning.  I use the little egg cooker I’ve talked about in previous blogs. I love using that.

I toasted two pieces of toast in the toaster, added butter when done.

Since I did the red, white, and blue theme—I used red strawberry jam and cut up two strawberries to add to the plate.

Delicious!
