My Food Diary October 24, 2012
I combined fruits and veggies for topping. I placed pizza, topping side down on piece of aluminum foil and baked on bottom rack of Nuwave Oven for 5 minutes. Removed, flipped over the pizza, added the fruit, and baked an additional 5 minutes.
I started with a frozen, bought pizza and added additional food of my choice to that. I love that I can start with frozen and have a great pizza in 10 minutes. Fast, easy, and healthy!

My Food Diary
Baked fish, eggplant, and potatoes. (All done at same time in NuWave oven. Started with frozen fish) Make a little mini pone of cornbread from batter leftover from previous day. Baked cornbread in a toaster oven. Added slices of tomato for color and because I like them. LOL (Photos are different stages of the baking process, etc.)
I usually only use one rack for a meal but this time I used two. I place an old cake pan under the drip pan and add a little water to the cake pan to catch drippings.
I like quick, easy, simple, and healthy cooking. This meal took just a bit longer since I did coat the sliced of eggplant instead of baking them plain—as the pieces of potato are.
I won’t make “food beautiful” but this blog helps me keep a food diary, for medical reasons and I don’t mind sharing ideas that might help other people that might like to try them. Any of these items can be baked in a conventional oven.

After some of the storm (Isaac) stress and since I did have electricity (thank God), I decided to have my version of a feast.
I added the frozen chicken breast, onion, and zucchini squash to a pan and placed in Nuwave Oven. I baked for about 15 minutes (this was a LARGE, frozen chicken breast). When timer went off, I turned chicken breast and squash over and continued to bake for 10 minutes.
Meanwhile, I made fiesta (packaged mix) rice in the rice cooker. While all of this was cooking I made the lettuce and tomato salad.
I really enjoyed this. It’s so easy, so fast, healthy, and delicious.
*This should be ok for almost anyone, however, I realize my methods of cooking, choice of food, or portion size may not be suitable for everyone. I share this blog in case it helps other people might enjoy trying it. I do not add salt and I remove any chicken before cooking. Only other problem other people may have is with pre-packaged Fiesta Rice that may have salt, etc. I do this personal food blog, my choice, for medical reasons. I use Nuwave oven but this may be adapted to conventional methods.

Today I baked fish, potato chunks, onion, and bell peppers. The fish was frozen. I placed everything in a pan, placed in Nuwave oven, set time for 10 minutes and started the oven. After the 10 minutes, I turned everything over, added a bit more onion and pepper, set timer for another 10 minutes and pressed start.
I prepared lettuce and tomato salad while the fish cooked the last 10 minutes. Placed all on plate and enjoyed eating my fast, easy, healthy meal. I’m past all of that complicated cooking. LOL

Sneaky Veggie Salmon

Do you need more nutrition or cook for someone that barely eats? I frequently try to pack all the nutrition I can into a meal.
I had leftover cabbage and carrot salad (no dressing) that I needed to use, so I added it to a can of salmon. Added 1 egg, with small amount of flour and water. Formed into patties, coated with slight coating of flour. Placed in drip pan and baked 10 minutes in Nuwave/Rapid Air Oven, turned over, baked 10 more minutes till done. I also cooked the potato wedges and bell pepper slices in the same container along with the salmon patties. All were done at the same time.
I think this is an easy, simple, and nutritious meal. It was delicious, too.

My Food Diary August 2012
For a change, quick breakfast of cheese toast, egg, and sliced fruit.
Whole wheat bread with grated cheese, toasted in a toaster oven. Egg done on top of stove in a very small amount of butter. Added a few slices of fresh fruit that I had on hand.

I placed 1 small (FROZEN) steak in drip pan. Added sliced sweet potatoes and sliced onion. Baked in Nuwave Oven 10 minutes, turned all over and baked another 10 minutes.I did the rice in a rice cooker. The rice and the steak and potatoes all cooked about the same length of time. Meanwhile I prepared lettuce, tomato,and other salad ingredients. Served on a colorful plate. LOL I try to eat healthy AND try to make it as easy, simple, fast, and uncomplicated as possible. Yes, the steak was frozen when I started and no, I did not thaw it out first. Bottom photo shows food on drip pan in the Nuwave oven. I cook it all together.

My Food Diary July1, 2012
I just couldn’t stand it any longer! LOL I was hungry for watermelon and decided to cut it today. Oh, well—I’ll have plenty for July 4th. LOL
I cut about half the watermelon, removed rind and seed, cut into chunks, and bagged. Doing it that way takes less room in the refrigerator and makes it easier to “nibble”. LOL I filled 2 quart bags with watermelon chunks in addition to the serving I included photo of.
I usually don’t add salt to things but I did sprinkle with salt and pepper (LOL—I like pepper) today. Probably won’t add salt as I nibble though. I didn’t add but a tiny bit to it.
After I eat the two quart bags I prepared, I’ll cut the other half of the watermelon. Watermelon is good to eat on a hot day to help cool off. At least I’ve found that is one of the best things that really helps me. Watermelon is a healthy thing to eat but we need to be aware that it is considered to be a “sweet”. Be aware of that, especially if you are diabetic or if you help prepare meals for someone that is.

My Food Diary June 29, 2012
I baked (yes, baked) the chicken hot dogs yesterday since I was baking a chicken breast anyway. See My Food Diary June 28, 2012 for photo, etc.
I cut one chicken hot dog in half, placed each on a croissant with lettuce and tomato. Fruit salad can be made with any fruits you have. I had kiwi, strawberries, mandarin oranges,and banana today. I don’t always add salad dressing but today I did use low-fat Thousand Island Dressing. Super easy, fast, and healthy.

My Food Diary, June 28, 2012
I baked the chicken and some chicken hot dogs (have hot dogs tomorrow), in Nuwave Oven. Chicken breast was frozen when I started baking. I baked 10 minutes, turned over, baked another 10 minutes.
While meat baked, I tore lettuce leaves and prepared washed veggies (you may slice or chunk, your preference). After chicken was baked, I cut into pieces and added to the bowl. Toss and it’s done! Easy, quick, light for this hot weather, and delicious.
Photo of veggies: Yummy veggies I got last week. Enjoyed, enjoyed, enjoyed! LOL Thanks for sharing with me! Now, (lol) when are the tomatoes ready (or anything else) ?????? Just had to say it—I’m bad, huh? LOL
