Breakfast In a Bowl.
I cooked grits in microwave. Chopped a small amount of cheese and sprinkled around after grits were done. I placed one egg in very small amount of coconut oil (olive oil will do) and cooked until it was hard cooked. I actually prefer the runny yolk style but usually cook the yolk until well done, it may be safer that way.
Popped one slice of whole wheat bread into toaster. I ate it without any butter, oleo, or whatever.
Sprinkled with pepper and other seasonings. It’s ready to eat!!!! (I like a lot of pepper on mine)
* I realize my choice of foods and/or method of preparation may not be suitable for everyone. I have medical problems that I keep this food diary in order to help myself keep up with things I do eat. Perhaps if you have problems that make you not even want to cook or eat——my hope is that I sometimes offer suggestions that may encourage you that cooking can be simple, fast, easy, and nutritious without staying in the kitchen all day.

I suppose I broke some rules today at lunch. (meat, egg, cheese and 2 slices of bread) LOL I wanted something really simple, quick, and nutrition—other than not eating anything.
I had a left-over baked chicken breast that I baked in Nuwave oven yesterday. I also wanted an egg. LOL Well, the thought came to mind why not have both! I prepared the egg without any butter or oil. I have an egg cooker made for use in microwave so I scrambled the egg in that container and cooked 1 minute. I used 2 slices whole-wheat bread, added torn lettuce, 1/2 of a large chicken breast, the cooked egg, small amount of grated cheese, and honey mustard. I also ate a large, fresh strawberry and a banana.
It really was good and a lot better than skipping meals, as I do sometimes. Easy, quick, and filling.

For a change, quick breakfast of cheese toast, egg, and sliced fruit.
Whole wheat bread with grated cheese, toasted in a toaster oven. Egg done on top of stove in a very small amount of butter. Added a few slices of fresh fruit that I had on hand.

Breakfast, any time of day! LOL
1/4 cup grits
3/4 cup water
Add to microwave safe container. Cook 1 1/2 minutes, stir, cook 1 minute more. Check in less time each time, stir each time. When done, add amount of cheese you desire. Stir. Serve on plate with egg and toast.
1 T. water
Place egg into egg cooker (see photo). Add water. Scramble egg, Add black pepper. Cook in microwave until done. This is usually 1 minute for mine. Add to plate with grits.
2 slices bread
Place bread in toaster. When done, remove, spread lightly with coconut oil (instead of butter), if desired. Cut into desired shape or leave whole. Add to plate with grits and egg. \
Enjoy! I usually don’t use oils, butter, and such when cooking. However, now and then I do put coconut oil on something, for variety.
Easy and quick. I think it’s healthy, too. We should have “some” of all food groups but not in excess.

Cheesy Grits, Scrambled egg, Toast, and Apples
1/4 cup grits
3/4 cup water
1/4 cup shredded cheddar cheese (or amount you desire)
Place grits and water in container, place in microwave, cook for 1 1/2 minutes, stir
Cook 30 seconds, stir (do this in 30 second intervals until done)
Add cheese and stir.
1 teaspoon water
seasonings of your choice
Place egg in micro egg cooker, add water, mix with wire whisk
Cook 1 minute in microwave.
Sprinkle with black pepper and Italian seasoning
2 pieces whole wheat bread
small amount of coconut oil
Place bread in pop-up toaster when done, spread small amount of coconut oil on each piece. Slice bread in half, diagonally.
Wash apple, cut into slices or pieces. Add to plate with grits, egg, and toast.
Delicious! Not fancy but easy, quick, and good!
Simple Brunch For One
1 leftover, cooked chicken sausage, sliced
Desired amount of onion, green onion, sliced mushrooms
Cook chicken sausage, onion-mushroom mixture in skillet on stove-top
1 egg, added to 1 Tablespoon water
Pierce small hole in egg before cooking in the microwave in egg cooker. Microwave for 1 minute.
Toast 2 pieces of wheat bread in toaster, add small amount butter, if desired.
Store bought strawberry preserves.

I cooked grits in microwave according to directions on package. After cooked, I added cheese and some butter. I also added black ground pepper.
I cooked one egg in the microwave with some chopped purple onion, chopped green onion, and some chopped up tomato. I also added black ground pepper and Italian Seasoning. I use the little egg cooker I’ve talked about in previous blogs. I love using that.
I toasted two pieces of toast in the toaster, added butter when done.
Since I did the red, white, and blue theme—I used red strawberry jam and cut up two strawberries to add to the plate.
*I make no claims that what I eat is best for everyone. I am eating healthier than I did before but today was an exception. LOL I use various appliances that I personally like to use and in no way infer you have to cook it as I do.
