Today I baked fish, potato chunks, onion, and bell peppers. The fish was frozen. I placed everything in a pan, placed in Nuwave oven, set time for 10 minutes and started the oven. After the 10 minutes, I turned everything over, added a bit more onion and pepper, set timer for another 10 minutes and pressed start.

I prepared lettuce and tomato salad while the fish cooked the last 10 minutes. Placed all on plate and enjoyed eating my fast, easy, healthy meal. I’m past all of that complicated cooking.  LOL

Steak was frozen when I placed it in Rapid Air/Nuwave Oven. (Rapid Air is earlier version of Nuwave, I believe) I added potato pieces to the same container as the steak. Bake 10 minutes, turn everything over, add slices of bell pepper and onion. (see bottom photo)  Bake 10 minutes more.

When done, I added salad to the plate with small amount of salad dressing.

*My method or choice of food may not be suitable for everyone. I like easy, uncomplicated cooking.

For a change, quick breakfast of cheese toast, egg, and sliced fruit.
Whole wheat bread with grated cheese, toasted in a toaster oven. Egg done on top of stove in a very small amount of butter. Added a few slices of fresh fruit that I had on hand.

My Food Diary, June 28, 2012

I baked the chicken and some chicken hot dogs (have hot dogs tomorrow), in Nuwave Oven. Chicken breast was frozen when I started baking. I baked 10 minutes, turned over, baked another 10 minutes.

While meat baked, I tore lettuce leaves and prepared washed veggies (you may slice or chunk, your preference). After chicken was baked, I cut into pieces and added to the bowl. Toss and it’s done! Easy, quick, light for this hot weather, and delicious.

Photo of veggies: Yummy veggies I got last week. Enjoyed, enjoyed, enjoyed! LOL Thanks for sharing with me!  Now, (lol) when are the tomatoes ready (or anything else) ?????? Just had to say it—I’m bad, huh? LOL

*I eat healthier than before. Added NO oil or salt. Meat can be prepared in various ways but I just prefer NuWave. My food choices or method of preparation may not be suitable for everyone.

My Food Diary June 7, 2012

I used torn lettuce leaves, chopped tomato, bellpepper, onion, radish, cucumber, and low fat Ranch dressing.

I also added photo of my “snack” last night.  LOL Frozen Chocolate Yogurt and chopped Fresh Strawberries.

My Food Diary

I think the photos, with directions, explains the way to do this meal. I did add black ground pepper, Italian seasoning, and lemon juice to the fish (fish was frozen) before baking. Fish and veggies all baked same amount of time in the Nuwave Oven. I baked this 20 minutes total and it was delicious.

*I do not imply my method is the only way to cook. I simply prefer Nuwave Oven to bake things instead of conventional oven.  I eat healthier than I did but do not imply this meal is best for everyone.

I’ve been busy with things and just simply had to have a little “different” coffee this morning. It was nice for a change. I added a bit of powdered milk and powdered chocolate mix to the coffee and stirred it.  I found serving this special (to me) coffee in a cup and saucer made it even more enjoyable! LOL

Yesterday, I simply did a baked potato in the microwave, sliced up a tomato, opened a can of fruit cocktail (drained it), added 1/2 banana and some salad dressing. I put a small amount of butter on the potato and added chopped green onions. Light meal but quick, easy, and actually was filling.

*I make no claims that the way I eat is what another person should eat. I eat healthier than before I started this blog and it works for me.  Also, the appliances I use to cook, work better for me.  Everything I do can be done in another way.

Chicken Salad Plate, Complete Meal

Place chicken (canned chicken is great since you don’t have to cook it and it’s ready to use. Comes in can like tuna fish does.) in bowl. Chop up the amount of bell pepper, onion, celery, radishes, etc. in a food chopper. Add to chicken. Add spicy mustard and pickle relish, as desired.

Place washed and drained lettuce on plate. Top with several spoons of the chicken salad mixture, add a few pieces of chopped tomato, chopped green onion, ground black pepper, and Italian Seasoning.

Actually, you can use mixture you desire, depending what you like in chicken salad. This is what I had on hand and it’s also what I like in chicken salad. There is no set amount as in cups, spoons, ounces, etc. Just chop, mix, serve, and enjoy. (You may use salad dressing, as I did or eat plain, without anything on top of the salad.)

This chicken salad that I did was served on a regular dinner plate and was my complete meal.  It was easy, healthy, fast, and delicious. Thank you so much for reading my blog, sharing it, trying it, or whatever. Enjoy.

May 20, 2012   My Food Diary

Baked fish fillet, seasoned potato cubes, cut asparagus pieces, sliced tomatoes, chicken hot dog, with yellow and green onions. (You add seasonings of your choice.) I did the hot dogs since I had some frozen ones that needed to come out of freezer and while I was baking something else I just wanted to “test” baking them.  LOL

I placed FROZEN fish fillet and FROZEN chicken hot dogs in drip pan (place drip pan over 9 in. cake pan with small amount of water to catch drippings) that came with NuWave Oven.

Add the potato cubes and chicken hot dogs. Add seasonings and onions. Bake10 minutes in Nuwave Oven (or Rapid Air Oven), turn all items over. Continue to bake for 10 minutes more. 

I sliced the tomato and placed on plate. I opened canned asparagus pieces, placed directly on plate (I did not heat this), added meat and potatoes—presto—ready to eat!

Delicious, easy, quick (from frozen, mind you), and healthy.

*Kept for personal reason but if I help someone else along the way, I’m glad. I make no claims that my way is for anyone else.  I only know I’m eating healthier.

Since I did the red, white, and blue theme—I used red strawberry jam and cut up two strawberries to add to the plate.
