My Food Diary Blog Labor Day 2012
I didn’t have bar-b-que but I did have a great meal. Top photo shows completed meal and bottom photo shows baking the fish, potato cubes, and green beans in one pan—in a Nuwave Oven. The various things in this lunch can be cooked in a more conventional way, if desired. I just like the convenience of placing frozen fish and other ingredients into a pan and baking it all at once. It’s fast, easy, and healthy cooking.
I placed frozen fish and potato cubes in pan, seasoned (no salt), and baked 10 minutes. After that, I turned the fish and potatoes over, added green beans and onion slices. Baked all for 10 more minutes. Non-traditional Labor Day meal but it was just exactly what I wanted.

September 3, 2012 (Labor Day)
After some of the storm (Isaac) stress and since I did have electricity (thank God), I decided to have my version of a feast.
I added the frozen chicken breast, onion, and zucchini squash to a pan and placed in Nuwave Oven. I baked for about 15 minutes (this was a LARGE, frozen chicken breast). When timer went off, I turned chicken breast and squash over and continued to bake for 10 minutes.
Meanwhile, I made fiesta (packaged mix) rice in the rice cooker. While all of this was cooking I made the lettuce and tomato salad.
I really enjoyed this. It’s so easy, so fast, healthy, and delicious.
*This should be ok for almost anyone, however, I realize my methods of cooking, choice of food, or portion size may not be suitable for everyone. I share this blog in case it helps other people might enjoy trying it. I do not add salt and I remove any chicken before cooking. Only other problem other people may have is with pre-packaged Fiesta Rice that may have salt, etc. I do this personal food blog, my choice, for medical reasons. I use Nuwave oven but this may be adapted to conventional methods.

I suppose I broke some rules today at lunch. (meat, egg, cheese and 2 slices of bread) LOL I wanted something really simple, quick, and nutrition—other than not eating anything.
I had a left-over baked chicken breast that I baked in Nuwave oven yesterday. I also wanted an egg. LOL Well, the thought came to mind why not have both! I prepared the egg without any butter or oil. I have an egg cooker made for use in microwave so I scrambled the egg in that container and cooked 1 minute. I used 2 slices whole-wheat bread, added torn lettuce, 1/2 of a large chicken breast, the cooked egg, small amount of grated cheese, and honey mustard. I also ate a large, fresh strawberry and a banana.
It really was good and a lot better than skipping meals, as I do sometimes. Easy, quick, and filling.

Steak was frozen when I placed it in Rapid Air/Nuwave Oven. (Rapid Air is earlier version of Nuwave, I believe) I added potato pieces to the same container as the steak. Bake 10 minutes, turn everything over, add slices of bell pepper and onion. (see bottom photo) Bake 10 minutes more.
When done, I added salad to the plate with small amount of salad dressing.

Sneaky Veggie Salmon

Do you need more nutrition or cook for someone that barely eats? I frequently try to pack all the nutrition I can into a meal.
I had leftover cabbage and carrot salad (no dressing) that I needed to use, so I added it to a can of salmon. Added 1 egg, with small amount of flour and water. Formed into patties, coated with slight coating of flour. Placed in drip pan and baked 10 minutes in Nuwave/Rapid Air Oven, turned over, baked 10 more minutes till done. I also cooked the potato wedges and bell pepper slices in the same container along with the salmon patties. All were done at the same time.
I think this is an easy, simple, and nutritious meal. It was delicious, too.

My Food Diary August 2012
For a change, quick breakfast of cheese toast, egg, and sliced fruit.
Whole wheat bread with grated cheese, toasted in a toaster oven. Egg done on top of stove in a very small amount of butter. Added a few slices of fresh fruit that I had on hand.

I baked this cobbler in toaster oven. Even though the toaster oven heats up the kitchen less than a regular oven—it still takes too long to do this very often during hot weather. Delicious, though! LOL

I placed 1 small (FROZEN) steak in drip pan. Added sliced sweet potatoes and sliced onion. Baked in Nuwave Oven 10 minutes, turned all over and baked another 10 minutes.I did the rice in a rice cooker. The rice and the steak and potatoes all cooked about the same length of time. Meanwhile I prepared lettuce, tomato,and other salad ingredients. Served on a colorful plate. LOL I try to eat healthy AND try to make it as easy, simple, fast, and uncomplicated as possible. Yes, the steak was frozen when I started and no, I did not thaw it out first. Bottom photo shows food on drip pan in the Nuwave oven. I cook it all together.

I cooked peas, okra, and a couple of new potatoes in slow cooker (bottom photo).
Baked corn bread in toaster oven enough to “set” the bread. I finished in in the Nuwave Oven. The reason I didn’t do it from start to finish in the Nuwave is that it tends to blow the air and cause uneven top to baked things. Also, I had other items baking in the Nuwave so the use of the toast oven came in handy to start the bread.
I baked chicken breast, okra, and potatoes in the Nuwave Oven. Bake 10 minutes, turn items over, bake 10 minutes more.
After items were done, I added sliced tomato to the plate.
