For a change, quick breakfast of cheese toast, egg, and sliced fruit.
Whole wheat bread with grated cheese, toasted in a toaster oven. Egg done on top of stove in a very small amount of butter. Added a few slices of fresh fruit that I had on hand.

Since I’ve cut back on bread intake, I seldom treat myself to waffles. I had fruit, non-dairy topping, and canned blueberry pie filling on hand. So, yes—I did it. LOL (and yes, overdid it, too!) One good thing about waffles, you can prepare a few and freeze the extras)
Rather simple to make with packaged mix and canned pie filling. Chop the fruit and place in a bowl or add to top of waffles when ready to serve. Add syrup, if desired. I included photo of both.

Cheesy Grits, Scrambled egg, Toast, and Apples
1/4 cup grits
3/4 cup water
1/4 cup shredded cheddar cheese (or amount you desire)
Place grits and water in container, place in microwave, cook for 1 1/2 minutes, stir
Cook 30 seconds, stir (do this in 30 second intervals until done)
Add cheese and stir.
1 egg
1 teaspoon water
seasonings of your choice
Place egg in micro egg cooker, add water, mix with wire whisk
Cook 1 minute in microwave.
Sprinkle with black pepper and Italian seasoning
2 pieces whole wheat bread
small amount of coconut oil
Place bread in pop-up toaster when done, spread small amount of coconut oil on each piece. Slice bread in half, diagonally.
Wash apple, cut into slices or pieces. Add to plate with grits, egg, and toast.
Delicious! Not fancy but easy, quick, and good!
Simple Brunch For One
1 leftover, cooked chicken sausage, sliced
Desired amount of onion, green onion, sliced mushrooms
Cook chicken sausage, onion-mushroom mixture in skillet on stove-top
1 egg, added to 1 Tablespoon water
Pierce small hole in egg before cooking in the microwave in egg cooker. Microwave for 1 minute.
Toast 2 pieces of wheat bread in toaster, add small amount butter, if desired.
Store bought strawberry preserves.
