My Food Diary, Just Saying

I think I’m craving starches today! LOL Macaroni, sweet potato, and irish potato all in one meal.  Maybe its the cold weather. 

I breaded the frozen chicken breast wit a cereal crumb mixture that I make at home. Placed frozen chicken breast, sliced sweet potato, sliced irsh potato, one whole tomato, and sliced onion on a drip pan. Placed all in Nuwave (or Rapid Air) oven. Bake at 350 15 minutes turn all over and continue to bake 10 more minutes.

Placed one cup macaroni with two cups water in rice cooker. I cooked the macaroni for about 20 minutes in the rice cooker.

Simple, easy, and healthy cooking for a cold day. My daughter made the Chocolate Chip Cake. I certainly enjoyed the two pieces she sent to me—though I didn’t eat both at the same time.  LOL I love that cake she makes! 

I keep this food diary for my own record but if I encourage other people to at least try to cook and eat something, especially when they don’t feel well or feel like standing over a stove stirring something—then I’m glad I helped. *My food choices or method of cooking may not be suitable for everyone. My Food Diary August 17, 2012

I suppose I broke some rules today at lunch. (meat, egg, cheese and 2 slices of bread)  LOL  I wanted something really simple, quick, and nutrition—other than not eating anything.

I had a left-over baked chicken breast that I baked in Nuwave oven yesterday. I also wanted an egg. LOL  Well, the thought came to mind why not have both! I prepared the egg without any butter or oil. I have an egg cooker made for use in microwave so I scrambled the egg in that container and cooked 1 minute. I used 2 slices whole-wheat bread, added torn lettuce, 1/2 of a large chicken breast, the cooked egg, small amount of grated cheese,  and honey mustard. I also ate a large, fresh strawberry and a banana.

It really was good and a lot better than skipping meals, as I do sometimes. Easy, quick, and filling.

Grilled Chicken Breasts, Spaghetti cooked in sauce, Green Beans, and Radishes

1 small portion dry spaghetti, break in half

Water to cover spaghetti, in slow cooker

Turn on high for about 1 hour

Add chopped celery, green onion, and any other things like bell pepper if you like,

Add 1 can tomato sauce

Add Black pepper and Italian seasoning

Cook about 30 minutes.

2 frozen chicken breast on drip pan, on 1 inch rack, in Nuwave Oven

Add seasonings of choice

Cook 10 minutes per side, flip chicken breast halfway through cooking time and add more seasonings to flipped side.

Heat green beans on plate in microwave.

Slice 1 radish to garnish green beans.

Add 1 chicken breast and serving of spaghetti

Sprinkle spaghetti with  Parmesan & Romano Cheese

Serve and enjoy!

I know some people do not like the idea of cooking spaghetti in the sauce and prefer sauce in different container to spoon over the spaghetti.  I just prefer the less mess and cleanup and the taste is fine with me.  This was meatless sauce since I served a piece of chicken breast for the meat.  I’ll use the other chicken breast for another meal.

I want to eat healthy, don’t want big mess, and don’t want to be in kitchen all day hovering over stuff.  I must say, it was delicious—to me! LOL
