My daughter cooked for friends and I was invited. I wasn’t hungry when the meal was ready so I did a bring home plate which I ate a couple of days later. It certainly was good. I didn’t cook this so I can’t tell you how it was cooked.
I do know it had veggies, roast beef, and garlic bread and it was delicious!

My daughter did it again! Work on removing carpet in bathroom is no time to cook. She sent me this delicious Angus Burger, Fried, and Cola! I was really hungry and didn’t even know it. She also supplied the painters and the paint for the floor, too!
Couldn’t have carpet in a flooding bathroom! Concrete floor painted real nice, too. Good job! May still have mold in walls each time it rains and a mess on the floor but at least it’s not getting in carpet now. Thanks for the help and thanks for the burger meal!
The story of the flooding is a long, drawn out thing I won’t go into. It’s just about driven me crazy but this too shall pass!

Stuffed Bell Pepper with Applesauce and Whole Wheat Crackers
1 cup raw rice, add two cups liquid, place in rice cooker, turn on rice cooker. Takes about 20 minutes to cook. My liquid was 1/4 apple juice, 1/4 cup salsa, and 1 1/2 cups water.
Bake bell peppers in Nuwave Oven, 1 inch rack, for about 10 minutes, turn pan and continue to bake for 5 minutes or until done
Saute mushrooms in very small amount of olive oil (very, very small amount) add chopped onions and chopped celery. Saute all while the peppers and rice are cooking. I did this on stovetop burner. I added a sprinkle of black pepper and a sprinkle of Italian seasoning. I did not add salt to anything.
When rice is done, add it to the skillet with the mushrooms, onion, and celery. Stuff bell pepper with this mixture and add to a plate. Place about 1/2 cup applesauce next to the stuffed pepper and sprinkle with cinnamon. Add about 5 whole wheat crackers. Your meal is done! Should be healthy, filling, and salt free. Enjoy!
These dishes could be done with conventional oven, stove top, microwave, as well as the appliances I like to work with, which I named.

Salmon patty, Macaroni with English Peas, and Sliced Peaches
Cook 1 cup macaroni with 2 cups liquid in slow cooker (about 20 min. on high)
Add 1/2 can English peas during last half of cooking period
1 can salmon, drained
1/2 can english peas, drained
1/4 cup chopped celery
1/4 cup chopped onion
1 or 2 green onions
1/4 chopped bell pepper
1 egg, beaten
Mix thoroughly and form into patties
In bowl, combine
flour and crushed whole wheat cereal
Dip patties and cover both sides with flour/cereal mixture
Place on drip rack in Nuwave Oven (can be done in conventional oven)
Bake 8 minutes, flip patties over and bake about 5-6 more minutes.
Open canned of sliced peaches, drain, add about 1/2 cup to plate with your patty and macaroni. See Photos. Enjoy! I know this should be healthy. Added no oil except a small bit of spray olive oil to coat drip pan.

3-15-2012 Macaroni and Veggie Plate
I’m watching my diet. Need low potassium, low cholesterol food.
I cooked the macaroni in slow cooker
1 cup macaroni
2 cups water
Cooked veggies together in rice cooker (inserted rack)
1 large turnip
1 medium apple
1 can drained and leached green beans
I scrubbed turnip and apple with a brush. I drained the green beans, soaked them in water, changed water after soaking several times. This is leaching. It helps remove potassium and sodium from foods. I left peel on apples even though I removed the peel as I ate. Gosh, I wanted some color from some where and grew up thinking you were better off eating the peel. Well, that’s still true except when you have too much potassium in your body as I do. It’s amazing the good things to lower cholesterol—RAISES the potassium! Very disappointed in this. I enjoyed the meal though. :)
