My Food Diary, Just Saying

Lunch today. Slow cooker spaghetti, baked chicken slices, spinach, and fresh strawberries. Easy, healthy, and fast.

*I realize my choices of food or method of cooking may not be suitable for everyone. I keep this food diary for my own medical reasons, my choice and for encouragement to other people that may not feel like long, drawn out cooking but need to eat. :)

Oh, wow! How quickly things change! Didn’t post to Twitter as it usually does. I wonder why???? :( Everything is always changing and usually not for the best, IN MY OPINION!

Cream of Chicken and Veggie Soup and Cornbread Muffins
In slow cooker add:
1 can mixed veggies (tomatoes were included in this can)
1 can cream of chicken soup
Leftover baked chicken, amount up to you
Water, amount up to you
Cook on slow until thoroughly heated and can be left on longer, of course which is one of the good things about using a slow cooker. I just make sure I have enough water to assure it can be left for amount of time I think it will be before mealtime.
I made regular cornbread batch. Instead of making a pone of bread, I placed in muffin pans. I baked this in toaster oven on 350 for about 25 minutes. I baked on lower rack and moved to top rack to brown for just the last few minutes.
Easy, healthy (to me), and delicious.

I think I’m craving starches today! LOL Macaroni, sweet potato, and irish potato all in one meal.  Maybe its the cold weather. 

I breaded the frozen chicken breast wit a cereal crumb mixture that I make at home. Placed frozen chicken breast, sliced sweet potato, sliced irsh potato, one whole tomato, and sliced onion on a drip pan. Placed all in Nuwave (or Rapid Air) oven. Bake at 350 15 minutes turn all over and continue to bake 10 more minutes.

Placed one cup macaroni with two cups water in rice cooker. I cooked the macaroni for about 20 minutes in the rice cooker.

Simple, easy, and healthy cooking for a cold day. My daughter made the Chocolate Chip Cake. I certainly enjoyed the two pieces she sent to me—though I didn’t eat both at the same time.  LOL I love that cake she makes! 

I keep this food diary for my own record but if I encourage other people to at least try to cook and eat something, especially when they don’t feel well or feel like standing over a stove stirring something—then I’m glad I helped. *My food choices or method of cooking may not be suitable for everyone.  Chicken Gumbo, Rice, and Crackers  01-15-2013
I combined a light roux (water and browned flour) with the BAKED chicken breast and BAKED chicken sausage in the slow cooker. Turned on high for about 2 hours. I don’t make roux with oil and I don’t make it as dark as most Southern people do.
I baked the FROZEN chicken breast, FROZEN chicken sausage,  chopped celery, and chopped onion in the Nuwave oven. I placed everything in one drip pan and placed on bottom rack in Nuwave. Baked at 350 for 10 minutes, turned everything over and continued to bake for 10 to 15 minutes more. Then, added all to slow cooker.
I placed a cup of rice with 2 cups water in rice cooker. Done in about 20 minutes. 
Very informal with whole wheat crackers on the side.  Delicious on a cold Louisiana day.
 I cook light compared to the really great cooks. I also cook easy! If this blog encourages someone that may not be cooking often or is eating very little—then that is great. You will never see my meals in Food Beautiful (LOL) that’s not my intent. I realize my choice of food or cooking methods are not for everyone. LOL

My Food Diary August 17, 2012

I suppose I broke some rules today at lunch. (meat, egg, cheese and 2 slices of bread)  LOL  I wanted something really simple, quick, and nutrition—other than not eating anything.

I had a left-over baked chicken breast that I baked in Nuwave oven yesterday. I also wanted an egg. LOL  Well, the thought came to mind why not have both! I prepared the egg without any butter or oil. I have an egg cooker made for use in microwave so I scrambled the egg in that container and cooked 1 minute. I used 2 slices whole-wheat bread, added torn lettuce, 1/2 of a large chicken breast, the cooked egg, small amount of grated cheese,  and honey mustard. I also ate a large, fresh strawberry and a banana.

It really was good and a lot better than skipping meals, as I do sometimes. Easy, quick, and filling.

I cooked peas, okra, and a couple of new potatoes in slow cooker (bottom photo).

Baked corn bread in toaster oven enough to “set” the bread. I finished in in the Nuwave Oven. The reason I didn’t do it from start to finish in the Nuwave is that it tends to blow the air and cause uneven top to baked things. Also, I had other items baking in the Nuwave so the use of the toast oven came in handy to start the bread.

I baked chicken breast, okra, and potatoes in the Nuwave Oven. Bake 10 minutes, turn items over, bake 10 minutes more.

After items were done, I added sliced tomato to the plate.

Easy cooking (used canned chicken), quick cooking, and healthy. Good for a light meal on a hot day! Salad meal, I suppose you could say.  LOL Chicken Salad, marinated salad, sliced tomato, and a croissant.

Chicken Salad Plate, Complete Meal

Place chicken (canned chicken is great since you don’t have to cook it and it’s ready to use. Comes in can like tuna fish does.) in bowl. Chop up the amount of bell pepper, onion, celery, radishes, etc. in a food chopper. Add to chicken. Add spicy mustard and pickle relish, as desired.

Place washed and drained lettuce on plate. Top with several spoons of the chicken salad mixture, add a few pieces of chopped tomato, chopped green onion, ground black pepper, and Italian Seasoning.

Actually, you can use mixture you desire, depending what you like in chicken salad. This is what I had on hand and it’s also what I like in chicken salad. There is no set amount as in cups, spoons, ounces, etc. Just chop, mix, serve, and enjoy. (You may use salad dressing, as I did or eat plain, without anything on top of the salad.)

This chicken salad that I did was served on a regular dinner plate and was my complete meal.  It was easy, healthy, fast, and delicious. Thank you so much for reading my blog, sharing it, trying it, or whatever. Enjoy.

My Food Diary

Baked Chicken, Steamed Broccoli and Zucchini Squash

1 FROZEN chicken breast (I like the NuWave Oven since I can take frozen food and bake it right away)
Ground Black Pepper, Italian Seasoning, and other seasonings if you like
Place chicken breast on drip pan (comes with Nuwave Oven) I insert this drip pan over a 9 in. cake pan with a little water in it to catch the drippings)

Bake in Nuwave Oven for about 10 minutes., Turn chicken over, add more pepper and seasonings, and also add a few veggies in the drip pan with the chicken, if desired. I added sliced zucchini squash, a piece of broccoli, and some chopped green onion.

Bake for 5-10 more minutes or until done. Meantime, see below:

Add broccoli, sliced zucchini, and sliced green onion to a steamer rack inside the rice cooker pot. Place water to just below the veggies in the pot you usually cook the rice in. Turn on the rice cooker and veggies should be done around the time the chicken breast is done.

Extremely easy, I consider it healthy, and easy clean-up. Delicious, too! (But, I’m not picky!) LOL
I did not like the broccoli done in the Nuwave. I’ll have to try another way to do it in Nuwave. But the broccoli in the rice cooker was fantastic!

*I make no health claims. I keep this food diary for personal health reasons. I eat healthier than I did—so—it’s healthy for me. Things I do in NuWave can be done in conventional oven. However, I prefer Nuwave since I can start with frozen meat and cook it without defrosting. It’s moist, done, and easier for ME!
